They work both organically and biodynamically and focus on local varieties rather than more commercial international ones. Le Bois du Cerf Blanc is made from 100% Vermentinu, sourced from 45 year old vines planted on blue schist soils. It's beautifully clean and pure, lots of quince, pear and fresh citrus here, with a gentle herbal aniseed twist. Beautifully
